 Creamy Pesto with Grilled Chicken

Preparation time: 15 minutes, cooking time 30 minutes
Makes 2 Servings
Ingredients:
•1/2 lb Linguine pasta
•2 Tablespoons Olive oil
•1 Teaspoon Oregano
•1 8oz Grilled Chicken breast
•1 Cup Alfredo sauce, (see recipe)
•2 Tablespoons Pesto sauce
•¼ Cup roasted Pine nuts
•¼ Cup freshly grated Parmesan cheese
Directions:
Prepare ½ lb Linguine Pasta, by following instructions on How to Cook Pasta.
Prepare Pine nuts, as instructions below.
Roasting Pine nuts: Heat oven to 350 F, place pine nuts on ungreased cookie sheet drizzle with olive oil and bake till golden brown 10-12 min’s
Lightly season chicken breast with salt and pepper. Heat olive oil in cast iron pan or griddle. Cook chicken 5-6 min’s per side or until fully cooked. Slice into ½ in cubes and set aside.
In medium sauté pan add 1 Tablespoon Olive oil, 1 8oz Grilled Chicken breast cut into ½ inch cubes, Adding 1 teaspoon oregano and salt and pepper to taste. Next add the pesto and pine nuts tossing together over medium heat. Next add 1 Cup Alfredo sauce and cook till boiling over medium heat, toss in Cooked Linguine and toss. Divide into two bowls and garnish with fresh chopped parsley, and grated Parmesan cheese serve Hot.
